I just finished the chicken salad I made on Monday. I like grapes and pecans in mine, too, but was out of grapes so I used Craisins. I love crescent roll rings but haven’t made any in a while. I may make one and share with my neighbors. Those chimichangas, though! WOW! I have some chicken that I canned, and it is perfect for a batch of them. Y’all make a good team!
Yep, in the Kentucky, Southern Indiana area, chicken salad with celery, seedless green grapes and chopped walnuts is called “Derby Chicken Salad.” Because of the Kentucky Derby in Louisville of course.

We use that buffalo mixture in stuffed shells and more cheese on top. It’s so good

I keep canned chicken on hand. Ive been tempted to use a can in dumplings but haven’t yet.
