If you love corn, you’ll want to try my Indian-style sweet corn fritters that contain an essential Indian spice blend, garam masala and a sprinkle of turmeric and cayenne to amp up the flavors. I love serving them with a spoonful of tangy, creamy sour cream or plain Greek yogurt and an extra sprinkle of scallions.
Indian-Style Sweet Corn Fritters
Makes 8 fritters
Ingredients
1 cup all-purpose flour
1 tsp baking powder
Fine sea salt, to taste
1 tsp garam masala
½ tsp ground turmeric
¼ tsp ground cayenne
3 cups sweet corn kernels
2 scallions, thinly sliced
⅔ cup shredded Parmesan cheese
1 cup whole milk
2 large eggs, lightly beaten
Extra-virgin olive oil, for frying
For Garnish
Sour cream or plain Greek yogurt
2 Tbsp thinly sliced scallions, green parts only
Preparation
In a large bowl, mix together the flour, baking powder, salt, garam masala, turmeric, cayenne, corn, scallions and Parmesan. Fold in the eggs and milk until no dry spots of flour remain.
Heat a cast iron skillet or stainless steel pan over medium heat. Add enough olive oil to coat the pan. Add ½ cup of the corn batter and flatten into a flat disc. Cook until golden brown, 3–4 minutes per side. Transfer to a plate and repeat with the remaining batter.
Serve the fritters warm with sour cream and thinly sliced scallions.
