These cookie ice cream sandwiches are easy to make and sure to be a hit at your next holiday party! All you need to do is line up Pillsbury themed cookie dough in two separate cake pans over parchment paper, then press them down so they all touch. Feel free to mix up the cookie doughs!
Scoop the ice cream of your choice into a separate cake pan (over parchment paper), smooth it out to create the middle layer, and freeze for at least an hour. Once the cookie layers are baked and cooled, chill them in the freezer. Assemble the layers and cut the sandwiches out. Roll the sides of the sandwiches in crushed candy canes to give them an even more festive touch, and enjoy!
