Another great video & recipe….one thing i have noticed about the dishes i have tried from your book is that my potato starch slurry seems to be cooking out kind of….it thickens nicely in the pan but then when served thins and drains to the bottom of the bowls.Does it have to be added when the sauce is boiling or slightly cooled….?
