That roast chicken is so dated and that is a jus not gravy.
I mix butter/marg with garlic granules and marmite. From the butt end you cab use your fingers or a spoon to lift off the skin from the meat and place the mixture and massage and move it up genitally. Make a slit in between the leg and the hip and you can get to the legs.
I also sear the chicken on the hob before cooking. They help better for a crisper skin and keep the bird moist. When searing, add a dash of white wine or apple cider vinegar to de glaze, lifting of the chicken from the pan, before adding stock. Get the stock up to a small boil before putting in the oven. slow cook on 170c fan. It gets crispy but stays moist.
Mid way, take some juices from the tray and add to the separate stuffing. If you want orange, slice and place along side as it blocks the air flow of the chicken. Use it on both the stuffing and to create the gravy at the end. As i use apple cider vinegar i tend not to use oranges. i also like to add a teaspoon of horseradish, when making the gravy.
