I do this with sweet peppers an egg we always called it skillet potatoes. But I have always loved potatoes when I can eat them anyway they are made lol !

One of the spices he would use was monterrey steak seasonings. That man could cook as well, if not better me. In my day, this was called smoothed potatoes with extras. I am 80. Originally from Fort Myers FL, Mother could really cook. I love saugage in my potatoes. Thank you. God Bless. After age 50 became allergic to garlic.
