Unfortunately, most of these comfort foods are meat dishes…Like to see more vegetarian dishes. I like how Ina cooks, but really, we need to eat less in this country, and a lot less meat! It is a big reason for global warming, factory farming…..something we must address now! We must have some restraint and discipline for our health and to make less suffering for animals who are stuck in the factory farming nightmare. It would be nice to see Ina represent some moderation.
WAtching Ina reminds me of my gourmet mom in the kitchen, Even when her month was longer than our money, we had super meals that were sometimes economical. Her mac and cheese was just like this EXCEPT she put in feta cheese too. Then, lots of breadcrumbs on top. She didn’t do the tomatoes, but I will try it with this recipe, and my mother’s feta in it, We loved it. I so appreciate your work. I am addicted to your presentations, Yummy.
