Adding bicarbonate of soda (baking soda) to the salt brine when soaking beans is even better and it also alleviates the gas problem some have with beans. Brining chicken before cooking is my favourite way and you will never have dry chicken. Your favourite herbs, garlic and spices added to the brine will up the flavour.
