Come make Nigerian Egusi soup with me. Growing up, I never cared for Egusi soup (I was always team okra soup), but as you mature in life, you realize that Egusi is the absolute best ?.

All of the ingredients used can be sourced from your local international market. Egusi is a protein-rich melon seed thatโ€™s used all throughout West Africa. Iru are fermented locust beans, which give many Western African dishes that signature umami taste.

I love to pack this soup with all the proteins and obstacles like shaki (tripe), ponmo (cow skin), and okporoko (stock fish). Pair it with your favorite swallow and youโ€™re sure to have a good time. Iโ€™m team fufu (or oat fufu if iโ€™m feeling healthy).
